Amy's Easy Chili:
Brown 2lbs ground beef, crumble and drain greese. In a large pan add 1 large can V-8 juice,the ground beef,2 cans pinto beans {drained}, 1can kidney beans {drained},1 can diced tomatoes {drained} 1 can rotel, 1 pack of ChiliO, and about 5 Tbls. of chili powder. Simmer on med heat,stirring to keep from sticking when needed for about 1 hr. Serve!

I put 4 boneless skinless chicken breast in crockpot, peel and dice 4 potatoes and put them in crockpot, add 1 diced onion,add 1/2 cup salsa, add 1 can diced tomatoes {drained}, add 1 can whole kernal corn {drained}1 can tomatoe paste,1 can Campbell's tomatoe soup.Fill to top with water. Cook on low for for 6 hours or on high for 3 hours.The chicken will just fall apart!

TRUCK STOP POTATOES
3 Quarts - 12 Servings

Preheat oven to 350°

2 lb. small red potatoes, cubed with skin on
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
2 cups diced ripe tomatoes
¼ cup chopped green onion tops
½ cup sour cream
1 stick (1/4 lb.) butter, melted

Boil potatoes just until tender. Drain and pour on cookie sheet. Drizzle with melted butter. Sparingly, sprinkle with salt and black pepper.

Bake in 350 degree oven for 15 minutes. (This dries the potatoes).
Pour into mixing bowl and add all other ingredients. Toss together.
Pour into serving dish and WOW!

Homemade Chicken Noodle soup

Homemade Chicken Noodle soup. 8 chicken breast, boiled and deboned (reserving broth). Stalk of celery sliced, 4 or 5 carrots sliced. Boil vegetables in broth. Add 12 oz egg noodles to broth (I add extra canned broth). Add shredded chicken. I add a variety of spices but you basically can add what you want: bay leaf, thyme, oregano, red pepper flakes, parsley and most importantly salt and pepper. Let simmer to flavors marry.

Boneless skinless chicken breast
3/4 cup milk
1/4 cup pickle juice
1 egg
1 1/4 cup flour
2 tablespoon powdered sugar
2 teaspoon salt
1 teaspoon pepper
Peanut oil. (vegetable oil will do)

Mix together the egg, milk and pickle juice. Marinate chicken for 2 to 4 hours.

Mix together dry ingredients. Coat chicken. Frying at medium high heat.

Boil 4 cups sugar & 6 cups water for five minutes.
Mash 5 bananas. Mix with 1 small can frozen lemonade, 1 large can frozen orange juice, 3 cups water, 14-oz can pineapple juice. Pour sugar water over this mixture. Divide into 3 1/2 gallon containers & freeze.
To serve: Pour 1 quart Ginger Ale over 1/2 gallon punch mix.

4 cups blackeyed peas. (2-15oz cans rinsed and drained)
8 green onions (just green part, chopped thin)
1/2 C chopped cilantro
3 jalepeno's seeds and stem removed, chopped small
2 plum tomatoes chopped
1yellow bell pepper stem and seeds removed, chopped
3cloves garlic minced
2 T olive oil
2 T lime juice
1 t ground cumin
Salt and pepper to taste

In medium bowl combine first 7 ingrdients. In separate bowl whisk together olive oil, lime juice, and cumin. Pour over pea mixture. Stir to coat. Add salt and pepper to taste. Best chilled for several hours. Serve with tortilla chips oras side salad

Party Dogs

For a party! cook hot dogs in the crock pot - don't add water. They will release moisture on their own. Cook on low for 4 hours. Or high for 2 hours. Just check the ones in the middle to make sure they are hot. Then turn your crock pot on the "warm" setting and they can be served for a pretty long time. They taste like they were cooked on a concession stand roller! Great for a large crowd. There are 40 in this picture. 60 will fit standing up in a 6-quart crock pot.

Wonton wrappers
1 lb. ground beef, browned
1 pkg. taco seasoning
Toppings {optional}
Cheese
Tomatoes
Lettuce
Sour Cream
Cilantro

Spray a 12-cup muffin pan with nonstick spray (I use a nonstick pan, too). Once your pan is all nice and greased, place one wrapper in each cup. Brown meat and drain. Return to pan and add taco seasoning and prepare according to package directions. Scoop a tablespoon of taco meat into each cup. I go ahead and add cheese to mine before putting them in the oven. Bake at 425 until wrappers are golden brown around the edges. Be careful though because those wrappers can burn if you're not paying attention! I start watching them around the 5 minute mark and then take 'em out around 8{ish} minutes. I know every oven is different, so just keep your eye on 'em so they don't scorch!!!! Remove from pan and add toppings as desired! I served these as an appetizer and sat out all the toppings so everyone could choose what they wanted....sour cream, tomatoes, lettuce, cilantro, etc.

Over medium heat combine first 4 ingredients and boil for 5 minutes.Remove from heat stir in baking soda stir well..Pour over popcorn stir well to coat well.

3 tbsp cinnamon
1/2 cup lite pancake syrup
4tbsp I can't believe it's not butter (the spray kind)

Spray pan with Pam. Mix pancake syrup and butter together. Mix brown sugar and cinnamon together. Pour half of syrup and brown sugar in pan. Then place biscuits over lapping each other. Then pour the rest of syrup and brown sugar on top of biscuits. 375 for 20 minutes

1/2 cup of oil
Mix all ingredients, make small round balls, place on cookie sheet, bake at 350 degrees about 8-10 minutes.
You can add chocolate chips, nuts, etc. if you choose to. Enjoy!

Hunter's stew

Hunter's stew
1lb hamburger meat cooked and drained
1lb bacon cooked and crumbled
1 can of diced tomato
1 can of stewed tomato
4 cans of pork n beans or 2 large ones (I like mine with lots of beans)
1 fresh onion chopped
1 small can of green chili.
Combine all in a crock pot and simmer for a few hours. I usually put mine on in the morning and it's ready that evening.

1 ½ cups graham crackers
1 1/3 cups peanut butter
1 box confectioner’s sugar
1 ½ sticks of butter, melted
12 oz semi-sweet chocolate morsels

Combine graham crackers, peanut butter, sugar, and butter. Mix thoroughly and press into long pan. Melt chocolate chips in double boiler. Spread chocolate over mixture. Let cool. Cut into squares.

Weekend Breakfast:
1lb sausage
6 eggs
6 slices bread,cubed
1 tsp. dry mustard
2 cups milk
1 tsp.salt
1 cup grated cheddar cheese

Brown sausage and drain. Mix eggs,milk,salt and mustard. Add bread,cheese and sausage. Pour into a 8x11 lightly greased glass dish and refrigerate overnight. Bake 45 min at 350. Let stand a few min then serve.

1 pork shoulder or butt
2 cups apple cider/juice or pineapple juice
1 cap full of "LIQUID SMOKE" flavoring
salt to taste

Place pork in crockpot. Mix the juice and Liquid Smoke and pour over pork. Set crockpot on Low setting & let cook approx 8-10 hrs. Because of temperature variations in crock ots check after 5 hrs. When done, remove and shred with a fork. I use pineapple juice most of the time.

1 cup chopped walnuts

Mix all ingredients together by hand & press into buttered 9x9 cake pan. Bake @ 325 for 35-45 mins.. Let cool before you slice.

"BBQ Sandwiches

Andi Neely You can try making your own "BBQ Sandwiches"...This is a recipe that my Daddy used to use...It's not anything like Whitt's or Lawler's...'cause it has bbq sauce...But, I always loved it! ;)

Slow Cooker BBQ
1 (3- to 4-lb.) boneless pork shoulder roast (Boston butt), trimmed
1 (18-oz.) bottle barbecue sauce
1 (12-oz.) can Coke

Place roast in a lightly greased 6-qt. slow cooker; pour barbecue sauce and coke over roast. Cover and cook on LOW 8 to 10 hours or until meat shreds easily with a fork.
Transfer pork to a cutting board; shred with two forks, removing any large pieces of fat. Skim fat from sauce, and stir in shredded pork. Serve on Hamburger buns....

Makes 8

1 can refrigerated crescent rolls
40 slices pepperoni
4 pieces of mozzarella string cheese, cut in half
pizza sauce

Preheat oven to 375. Unroll crescent rolls and separate into 8 triangles. Place 5 slices of pepperoni on each crescent roll. Top pepperoni with string cheese half and roll up. Place rolls on baking sheet and bake for 12-15 minutes, or until golden brown.

Quickie White Chicken Chili

2 cans chicken broth
2 cans white beans
1 sm can green chilies
1 pk white chicken chili mix

Mix all together and simmer about an hour or so.

Meatballs:
1 c. uncooked rice
1 lb. ground chuck
1/2 tsp. pepper
1 medium onion, finely chopped
1/2 tsp. salt
1 tbsp. cooking oil

Optional Meatballs:
1 cup Zatarains Yellow Rice & seasoning
1/2 tsp. pepper
1 lb. ground chuck
1 Tbsp. cooking oil

Sauce:
4 c. crushed canned tomatoes
1 Tbsp. worcestershire
1 teaspoon Italian seasoning

Optional Sauce:
1-1/2 cup beef broth
1 (15 oz) can plum tomatoes, hand crushed
1 can Rotel Tomato sauce)
1 Vidalia onion chopped
remainder of Zatarain's Yellow Rice

Mix rice with ground beef, pepper, salt and onion. Shape into balls the size of walnuts.
Pour cooking oil into a large pan with a lid. Add meatballs and brown on all sides.
Combine tomatoes, worcestershire and Italian seasoning and add to the meatballs.
Cover the pan and cook slowly about 30 minutes or until the rice is tender and the meatballs are doubled. Meatballs will look like porcupines with bristles sticking out

1 cup sugar
1 cup self rising flour
3/4 cup milk
1/2 cup (1 stick) butter, melted
Brown sugar
Cinnamon
1 can peaches, diced

Preheat oven to 350 degrees. Put 1 teaspoon of melted butter into each regular size muffin tin. With a wooden spoon stir together the sugar, flour, baking powder, salt and milk. Put 2 tablespoons of batter into each (non-stick) muffin tin. Add 1 tablespoon diced peaches on top of the batter. Sprinkle with brown sugar and then cinnamon. Bake for 12 minutes. Let them cool almost completely before taking out of pan. Use a butter knife to loosen the edges then just lift them out

Easy Taco Dip

Easy Taco Dip- in a glass dish layer the following: refried beans, sour cream & taco seasoning ( mixed together ) salsa, shreded cheese and top with black olives and serve with nachos

Cream Cheese Sausage Balls

Cream Cheese Sausage Balls: 1 pack of sausage, 1 pack of philly creme cheese (the bar not spread), and 2 cans of creasent rolls.
Brown sausage in skillet, then add cream cheese...melt and mix well. Unroll the creasent rolls and cut the triangles in half... scoop the mixture and wrap up the creasent around. Bake in the oven as directed on the creasent can. Kind of like the casserole but only in sausage ball form! Great for parties! Should make 32 balls!

1/2 cup (1 stick) unsalted butter
1 12 oz pkg frozen seasoning blend
(the cajun trinity - onions, celery, bell pepper) or 1/2 to 1 cp of each
2 tsp chopped or minced garlic
1/8 tsp celery salt
16 oz heavy whipping cream
16 oz half/half
8 oz shredded parmesan cheese
1 cup chopped provolone cheese
2 Tbsp. fresh snipped parsley
1tsp. Old Bay
Tony Chachere's or Zatarain's Creole Seasoning about 1-2 Tbsp. my preference

Saute vegetables in melted butter for 10 minutes...add remaining ingredients, cook until
thickened...if too thick, add milk until reaches desired consistency.
Serve over fettucine noodles topped with grilled chicken or sauteed shrimp.

Mix equal parts of pineapple juice & Coco Lopez (cream of coconut) I use 46 oz pineapple & 3 cans of coco. Add about 1 pint of 1/2 & 1/2. (this makes a lot) In blender add ice. Pour in coco mixture & blend. Add strawberry to bottom of cup then pour in coco. Enjoy

Toss 6 split chicken wings,
1 tablespoon vegetable oil and
3 tablespoons jerk seasoning on a sheet of foil.
Form a packet.
Grill over high heat, turning once, for 25 minutes.
Top with cilantro and serve with lime wedges

BEST HAMBURGER STEAK EVER





Steak:

1 1/2 lbs. ground hamburger
1/4 cup flour
1/4 tsp garlic powder
salt and pepper
1 med onion sliced

Gravy:

1/4 cup flour
2 beef bullion cubes
kitchen bouquet brownong sauce 1/4 tsp
water
salt
pepper

Mix hamburger, salt, pepper, garlic powder, and flour together. Form into patties. Brown on both sides. Remove from skillet.
Saute onion in the same pan, adding a small amount of oil if needed.

After sauteing the onion, remove from skillet and add flour for gravy. Stirring constantly, brown the flour. Stir water into the browned flour to make the gravy.

Add boullion cubes, salt and pepper. Thin with water for desired thickness.

Add Kitchen Bouquet if gravy isn't brown enough.

When gravy is made, put steaks and onion in gravy. Simmer for about 30 to 45 minutes, checking often and adding water to keep gravy from becoming too thick.

Serve with french fries, rice, or mashed potatoes

1 box lemon cake mix... add 1 1/3 cup vegetable oil, 5 eggs, Large box lime Jell-O, 1 cup orange juice. Bake at 350 degrees

Frosting:
1/2 cup butter, 8 oz. cream cheese, 3 T. Lime juice, 1 box confectioner's sugar

2 cups sugar
1 (5 oz) can evaporated milk
1 stick butter (the real deal)
3 Tbsp peanut butter
1 tsp vanilla flavoring

Mix sugar and milk in saucepan. Add butter. Cook until soft ball stage. Remove from heat and add peanut butter and flavoring. Mix well. Pour over warm cake. This is really good. It hardens slightly as it cools.

1 can cream of chicken soup
1 can mild Ro-Tel
8oz Velveeta
1lb chicken breast, cooked & shredded

Pre-heat oven to 350. Put spaghetti in greased 9x13. Melt butter and saute onions til tender...3-5 minutes. Add rest of ingredients, stirring until cheese is melted. Pour over spaghetti and bake until bubbly...25-30 minutes.

1 box white cake mix
1 small box strawberry gelatin
1 cup vegetable oil
1/2 cup milk
4 eggs
1 cup frozen strawberries, chopped
1 cup coconut
1 cup chopped pecans
Mix cake mix and jello; add oil, milk, and eggs. Beat until smooth. Fold in
remaining ingredients. Grease and flour 3 (9 in) cake pans. Bake at 350 for
20-25 minutes. Cool on wire rack.
Icing:
1 stick butter
1 lb. confectioner's sugar
1/2 cup drained strawberries
1/2 cup pecans
1/2 cup coconut
Cream butter and sugar; add other ingredients. Frost between layers, sides and
top. garnish with additional coconut and pecans, if desired.

Chicken Enchilada Bake

2c chicken breast, cooked & shredded
2c shredded Fiesta cheese
10 soft tortilla shells
3T butter
3T flour
2c chicken broth
1c sour cream
4oz green chilies

Pre-heat oven to 350. Grease 9x13 pan. Mix chicken with 1c of the cheese. Divide chicken/cheese mixture among tortilla shells. Roll up each and place in prepared pan. In saucepan, melt butter and stir in flour. Cook 1 minute. Whisk in broth. Heat over medium-heat til thick and bubbly. Stir in sour cream and green chilies. Remove from heat and pour over roll-ups. Sprinkle on remaining cheese. Bake 25-30 minutes til bubbly and golden.

EASY POT ROAST

Tona Shockley Haggermaker Easy Peasy! I put my roast in crock pot, salt, pepper then sprinkle with 1 or 2 pkts of lipton onion soup mix. Put baby carrots and peeled and diced potatoes on top. Then I mix a can of cream of mushroom soup and one can of water, pour over top and let cook. House will smell wonderful!

Mix all wet ingredients, mix all dry ingredients (except nuts and raisin) ...then blend together. fold in nuts and raisins.

Pour into greased pan(s) and bake at 325 for 1 1/2 hour

1 oz. vanilla extract
1 cup blueberries fresh or frozen thawed and rinsed
Preheat oven to 350. Lightly coat two 12 cup mini muffin pans with cooking spray. In a large bowl mix flour, brown sugar, cinnamon, baking soda, and baking powder. In a seperate bowl mix the bananas, eggs, and vanilla extract. Combine banana mixture into flour mixture until smooth. Fold in blueberries and spoon batter into pans. Bake 10 min or until done. SUGARS 4g CARBS 12.4g CALORIES 53.9 TOTAL FAT 0.3g

Zucchini Boats (Grilled)

2 medium zucchini
1 slice white bread, torn into small pieces
1/4 cup bacon bits
1 tablespoon minced black olives
1 jalapeno pepper, minced
3 tablespoons diced green chile peppers
1/4 cup minced onion
1/4 cup chopped tomato
6 tablespoons shredded sharp Cheddar cheese
1 pinch dried basil
seasoned salt to taste
ground black pepper to taste

Prepare the grill for indirect heat.

Place the zucchini in a pot with enough water to cover. Bring to a boil, and cook 5 minutes. Drain, cool, and cut in half lengthwise. Scoop out the pulp to about 1/4 inch from the skin. Chop pulp.

In a bowl, mix the zucchini pulp, bread pieces, bacon bits, olives, jalapeno, green chile peppers, onion, tomato, and Cheddar cheese. Season with basil, seasoned salt, and pepper.

Stuff the zucchini halves with the pulp mixture. Seal each stuffed half in aluminum foil.
Place foil packets on the prepared grill over indirect heat. Cook 15 to 20 minutes, until tender. (I have done this in foil and without foil..like them both ways)

Ingredients:

1 box marble cake mix
1 (14 oz.) can sweetened condensed milk
1 jar prepared caramel topping
1 bag snack size Butterfinger candies
1 (8 oz.) container whipped topping
1 cup prepared chocolate syrup

Directions:

Pre-heat oven to 350ºF.

Bake cake as directed in a 9x13 pan. Let cool. Poke holes all over cake. In a medium-mixing bowl mix condensed milk and caramel topping. Pour over cake. Break Butterfinger candy and sprinkle half all over cake. Top with whipped topping and sprinkle with remaining candy. Drizzle with chocolate syrup.

Tonight we will have cube steak batterered with flour, salt & pepper and fried, cheesey potaotes {potatoes cut in circles placed in a baking dish with a layer of onions, a layer of sharp cheddar cheese, butter pats on top of that and salt and pepper and cover half way with milk, bake for about 30 min or until potatoes are done}fresh corn on the cob, garden tomatoes and buttermilk cornbread.

Caramel Icing: 2 cups sugar, 1/2 cup sugar browned, 1 cup milk, pinch of salt, 1/2 lb. Butter, 1 tsp vanilla. Bring to boil all ingredients except sugar & vanilla. Brown 1/2 cup sugar in small iron skillet, while other ingredients boil. Add browned sugar and cook until soft ball forms in water. Add vanilla and beat to desired consistency and this covers a 2 layer cake.

1 box orange supreme cake mix
2 eggs
1/2 cup oil
1/2 cup water
1 small can mandarin oranges, drained & mashed

Mix all ingredients. bake in preheated 350 deg oven until toothpick comes out clean.

ICING: 1 mediun container Cool Whip, 1 mall box vanilla instant pudding, 1 small can crushed pineapple, drained, 1 small can mandarin oranges, drained & mashed.
Mix & spread on cake. Keep refrigerated

Chocolate Wet Cake


CHOCOLATE WET CAKE

1 box chocolate cake mix
Prepare cake mix as directed on box using a 9X13 pan.

TOPPING
2 cups sugar
1 can evaporated milk
1 tsp vanilla flavoring
1 stick of maragine
1 tbs of sifted flour (sift so won't have "pills" in your topping)

While cake is cooking mix all topping indgs in a pot and stir continiously. Bring to a boil. Poke holes in cake with handle of wooden spoon. Pour HOT topping over HOT cake. Allow to sit for several hours. The longer this sits the wetter it gets. Good served with vanilla ice cream or whipped topping.

Ingredients
1 cup flaked coconut
1 cup chopped pecans
1 (18.25 ounce) package German chocolate cake mix
1 (8 ounce) package cream cheese

Directions
1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease the bottom and sides of one 9 x 13 inch baking pan.

2.Layer coconut and pecans in the bottom of pan.

3.Prepare cake mix according to package instructions and pour over pecans and coconut.

4.Combine cream cheese, butter or margarine, vanilla and confectioners sugar and beat until smooth. Pour over cake mix
.

1lb ground beef
16-20 tortillas
1 can refried beans

Sour cream
Taco seasoning
1 big can of enchilada sauce
Shredded Fiesta cheese

Brown beef;drain
Mix in taco seasoning(add a little water) and bring to a boil, then simmer for 10 mins stirring occasionally)
Lay out tortillas
Spead refried beans in a strip on each one
Spread sour cream on top of beans
The amount of beans and sour cream is up to you, but I wouldn't do to much on the beans.
When meet is finished simmering spead over sour cream
Spray casserols dih and the place rolled tortillas in it.
Spread red sauce on top.
Cover with cheese
Bake at 325 for about 20-25 mins
I mix more sour cream in mine after baking

5 Granny Smith apples (peeled, halved, and cored)
1 can butter-flavored biscuits
1 stick butter
1 cup sugar

1 can 7Up
Cinnamon
Nutmeg




Preheat oven to 350 degrees. Roll out biscuit dough and place half an apple on one end. Bring the other end up and over covering the apple. Pinch seam together. Place in large baking dish. Repeat w/all the apples. Sprinkle apples bundles w/cinnamon and nutmeg. In a saucepan, melt butter and stir in sugar and 7Up. Bring to a boil. Pour this around apple dumplings. Do not pour directly on top of dumplings. Bake at 350 for 20-30 minutes. About halfway through baking time, take a baster and using the juice from the pan, baste dumplings thoroughly. Great served hot w/vanilla ice cream

1 Vanillia Cake Mix
1 tub of Chocolate frosting ( whichever u like Milk Choc or Dk Choc)

Mix Cake mix n bake as directed
when Cake is done put holes in top of cake with a wooden spoon handle (holes are bigger )
Mix Pudding as directed and pour over cake making sure to get it in the holes.
Put in Refrigerator for about 1 hour to chill
Put Chocolate frosting in tub in the microwave about 1 min or until creamy so u can pour.
Pour over the pudding mixture on top of cake n place back in Refrigerator for about 1 hour to get the frosting back to its regular consistancy.

2 teaspoons olive oil
1 pound sweet or hot Italian sausage, casing removed
1 cup onion, sliced
8 ounces mushrooms, sliced
2 cups pizza sauce
1/2 cup black olives, sliced
16 ounces mozzarella cheese, shredded
2 eggs
1 cup milk
1 tablespoon olive oil
1 cup all-purpose flour
1/2 teaspoon salt
1/4 cup Parmesan, grated
Directions
Preheat oven to 400 degrees F.

Heat oil in large skillet over medium heat. Add sausage and cook for 3 minutes, or until browned and cooked through, breaking up the meat as it cooks with a wooden spoon. Add onion and mushrooms and cook 2 minutes, until soft. Add pizza sauce and olives and bring to a simmer, about 2 minutes. Remove from heat and transfer sauce to the bottom of a 13 by 9-inch baking dish. Top with mozzarella cheese

Enchilada Stuffed Shells

Box of Jumbo Pasta Shells
2 1/2 lbs lean ground hamburger meat (I use 93/7)
1 pkg McCormicks Enchilada seasoning
Chopped onion (whatever amount you'd like)
5 cans enchilada sauce
1 can refried beans
Shredded cheese

Pre-heat ovento 350 degrees. Cook pasta shells according to package directions. Drain and set aside. In large skillet over medium heat brown ground hamburger, onion and enchilada seasoning pack until meat is no longer pink (using lean meat shouldn't be anything to drain). Stir in 1 can of enchilada sauce and refried beans. Using 2 9X13 baking dishes pour 1 can in bottom of each dish. Fill cooked pasta shells with meat mixture. Places each shell into to bottom of dish. When dish is full, pour 1 can of sauce over tops of the shells (1 can per dish). Cover and bake at 350 degrees for 25 minutes. Remove covers and sprinkle the tops of shells with shredded cheese and bake additional 5 mintues until cheese is melted.

(slow cooler or crockpot)

2 cans of black beans
2 cans of corn, undrained
2 cans of rotel, undrained
1 pack of ranch dressing mix
1.5 tsp cumin
1.5 tbsp Chili pwd
1.5 tsp onion pwd
1 8oz pack of crm cheese
3-4 chicken breasts
1/2 tsp cayenne pepper
3/4 tsp garlic pwd
1 cup diced onion (don't really measure this...I just use an onion)
3 garlic cloves, minced
approximately 1 cup of water (this is optional depending on how thick you like your Chili...if left out, its almost dip consistency)

 
 
The original recipe called for olive oil...because the directions below say to cook the onion and garlic...I don't believe in this when it comes to crockpot recipes, but, to each their own.

1.In a skillet, cook onions until tender, then add garlic and cook for one minute.

2.Set your crock pot to low and add chicken, onions and garlic, black beans, corn, rotel, all the seasonings, and ranch mix.

3.Stir

4.Add cream cheese on top. Just lay the block right on top and leave it there. Cook on low for 6 to 8 hours.

5.Before serving shred chicken and place back into slow cooker.

6.Mix cream cheese block. This will take a few minutes!

4 eggs
1/2 cup flour
1 tsp baking powder
1/4 tsp salt

Preheat oven to 350 degrees. Cook bacon in skillet until done but not yet crisp. Remove bacon from pan, dice and set aside. Drain all but 2 tablespoons drippings. Add onion, celery and bell pepper; sauté until soft. Combine all ingredients, except bacon, in a 2-quart casserole. Top with bacon. Bake for 40 to 45 minutes. Makes 8 servings.

1 lb. cheese ravioli
1 (15 oz) can fire roasted tomatoes
6-8 slices bacon
3 T butter
2 1/2 c arugula or baby spinach
3 T olive oil
1/2 c chopped fresh basil

Boil ravioli in a large pot of salted hot water according to package directions. Drain. While ravioli is boiling, fry bacon, drain on paper towel, and chop. In same pan, leave a small amount of bacon grease and add tomatoes, olive oil, salt and pepper and heat through. Add arugula, basil and butter and cook until just wilted. Add ravioli and chopped bacon and toss gently

Yields 8-16 pot pie cups (depending on if you split the biscuits in half)
Ingredients:
*8-count biscuits (I used Homestyle)
*1 cup cooked chicken breast, diced
*1 (10 1/2 ounce) can reduced-fat cream of chicken soup
*2/3 cup shredded low-fat cheddar cheese
*1 1/2 c. frozen veggies, thawed (I used 1 c. corn, peas and carrots & 1/2 c. broccoli)
*1 teaspoon dried parsley flakes
*1 teaspoon of minced onion
*1/4 teaspoon black pepper
*1/2 teaspoon salt

Preparation:
*Preheat oven to 400 degrees.

*Prep chicken: Place boneless, skinless chicken breasts in a medium skillet or saucepan. Add lightly salted water or chicken broth -cover and bring to a boil. Cover, reduce heat to low and simmer gently until the chicken is cooked through and no longer pink in the middle, 10 to 15 minutes.
*Separate biscuits and place each biscuit in a cup of a lightly greased 12-hole muffin pan, pressing dough up sides to edge of cup.
*In a medium bowl, combine chicken, chicken soup, veggies, cheddar cheese, parsley flakes, and black pepper. Mix well to combine.
*Evenly spoon chicken mixture into prepared biscuit cups.
*Bake for 12 to 15 minutes or until golden brown.
*Remove from oven. Place muffin pan on a wire rack and let set for 2-3 minutes. Serve at once

Childhood Thumbprint Cookies

1 c. butter
2/3 c. sugar
2 egg yolks
1/2 t. vanilla extract
2 1/4 c. flour
1/2 t. salt

Cream butter; gradually add sugar, beating until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Stir in vanilla.
Combine flour and salt; add to creamed mixture, mixing well. Chill.

Roll dough into 1" balls; place balls about 2" apart on ungreased cookie sheets.

Press thumb in each ball of dough, leaving an indentation. Bake at 300 degrees for 20 to 25 minutes; do not brown. Allow to cool on wire racks. Place about 1/2 t. chocolate frosting in each cookie indentation.

Chocolate Frosting:
1 c. sugar
1/4 c. cocoa
1/4 c. milk
1/4 c. butter
1/2 t. vanilla extract

Combine sugar, cocoa, and milk in a heavy saucepan. Bring to a boil, and boil 1 1/2 to 2 minutes, stirring constantly. Remove from heat; stir in butter and vanilla. Beat until mixture is of spreading consistency

1 cup sugar
1 cup self rising flour
3/4 cup milk
1/2 cup (1 stick) butter, melted
Brown sugar
Cinnamon
1 can peaches, diced

Preheat oven to 350 degrees. Put 1 teaspoon of melted butter into each regular size muffin tin. With a wooden spoon stir together the sugar, flour, baking powder, salt and milk. Put 2 tablespoons of batter into each (non-stick) muffin tin. Add 1 tablespoon diced peaches on top of the batter. Sprinkle with brown sugar and then cinnamon. Bake for 12 minutes. Let them cool almost completely before taking out of pan. Use a butter knife to loosen the edges then just lift them out.

OLD FASHION CHOCOLATE PIE

1 baked pie crust
1 c. sugar
3 tbsp. flour
2 tbsp. cocoa
3 eggs
2 c. sweet milk
1 stick butter
1 tsp. vanilla
Mix sugar, flour, and cocoa together until blended well. Separate eggs. Beat egg yolk, adding milk and vanilla. Add to dry ingredients. Mix well. Add butter, cook in double boiler until thick. Pour into baked crust.
MERINGUE:
3 egg whites
6 tsp. powdered sugar
Beat whites at high speed until frothy, then add 6 teaspoons of powdered sugar. Continue beating until rounded peaks are formed. Spread on pie and bake at 350.

Pool Hall Slaw

makes 5 qts.

1 gallon cabbage
3 large onions
2 bell peppers
3 carrots
3 cups sugar
1 cup white vinegar
1 Tbsp salt
1 tsp black pepper
1 1/2 tsp cayenne pepper
3 cups yellow mustard

Chop cabbage, onions, peppers and carrots in food processor. Put into an extra large stew pot. Add sugar, vinegar, salt, black pepper, cayenne pepper and yellow mustard. Mix thoroughly. Boil for 20 minutes while stirring to keep from scorching or sticking. Boil lids and keep clean jars hot until filling with slaw mixture. Place filled jars on towels and let jars seal on their own. This makes 5 quarts. (we usually make 50 at a time) We eat this on hotdogs, hamburgers, or just as a relish with meals (beans and taters). It's good stuff!

1lb large strawberries
1 (8 ounce) package cream cheese, softened
1/4 - 1/2 cup powdered sugar (depending on how sweet you want it)
1 teaspoon vanilla extract
1/4 - 1/2 cup graham cracker crumbs

Instructions:

1. Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife, if necessary (some of them are hollow already. Prep all of the strawberries and set aside.

2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or Ziploc with the corner snipped off. Fill the strawberries with cheesecake mixture.

3. Once strawberries are filled, sprinkle or dip the tops with graham cracker crumbs.If not serving immediately, refrigerate until serving.

2 pounds fresh asparagus, ends trimmed
12 slices bacon
½ cup light brown sugar
½ cup (1 stick) butter
1 tablespoon soy sauce
½ teaspoon garlic salt
¼ teaspoon freshly ground pepper

Preheat the oven to 400°F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about ½ inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt, and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast for 25 minutes, or until the spears have begun to wilt and the bacon looks fully cooked. Remove the toothpicks before serving.
I double the sauce mixture for extra sauce.

2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter
1/3 cup unsweetened cocoa powder

1/2 cup buttermilk or sour milk
1 1/2 teaspoons vanilla
 
Chocolate Frosting:
1/4 cup butter
3 tablespoons unsweetened cocoa
3 tablespoons buttermilk
2 to 2 1/4 cups sifted confectioners' sugar
1/2 teaspoon vanilla
1/2 cup chopped pecans, optional
Preparation:

Cake
Grease and flour a 15X10-inch or jelly roll pan or a 13X9-inch baking pan; set aside. In a large bowl, combine flour, sugar, baking soda, and salt; set aside.
In a medium saucepan combine 1 cup butter, 1/3 cup cocoa, and 1 cup of water. Bring mixture to a boil, stirring constantly. Remove from heat. With an electric hand-held mixer on medium speed, beat chocolate mixture into the dry mixture until thoroughly blended. Add eggs, 1/2 cup of buttermilk, and 1 1/2 teaspoons of vanilla. Beat for 1 minute (batter will be thin). Pour batter into the prepared pan.
Bake at 350 for about 22 to 25 minutes for the 15X10-inch pan or about 30 to 35 minutes for the 13X9-inch pan, or until a wooden pick or cake tester inserted in center comes out clean.

Pour warm chocolate frosting over the warm cake, spreading evenly. Place cake in pan on a wire rack; cool thoroughly before cutting.
Makes 24 servings.

Frosting
In a medium saucepan combine 1/4 cup butter, 3 tablespoons unsweetened cocoa powder, and 3 tablespoons buttermilk. Bring to a boil, stirring, over medium heat. Remove from heat; add 2 cups powdered sugar and 1/2 teaspoon vanilla. Beat until smooth. Add more powdered sugar or a little milk or more buttermilk, if needed, for a spreadable frosting. If desired, stir in 1/2 cup coarsely chopped pecans. Spread the warm frosting over the cake.

Squirmy Worms!


Ingredients:
2 packs (3 oz) Raspberry jello

1 pkg unflavored gelatin (for extra firmness)
3/4 cup whipping cream
3 cups boiling water
15 drops green food coloring
100 flexible straws (or enough to fill your container)
Tall container (1 quart or 1 liter carton of milk)

Directions::
Combine gelatin in bowl and add boiling water.
Let it cool to lukewarm and then add the whipping cream and 15 drops green food coloring. Gather your straws (don’t forget to flex them out) and put them in the container. It’s important that the straws have a tight fit so the jello stays in the straws. For this reason, a 1 liter carton may be better; you will probably get longer worms since there is a tighter fit. If you have a bigger container, a rubber band around the straws is helpful. Or you could just add more straws to fill the container.
Add the gelatin mixture to the straw-filled container and let it set until firm.
There are multiple ways you can remove the worms from the straws. You can roll a rolling pin over the straws and squeeze them out or you can hold the straws over warm water. The worms will slip right out

1 box lemon cake mix
1 sm pkg instant lemon pudding mix
12 oz sun-drop
3 eggs
3/4 c oil

GLAZE
1 c powdered sugar
2 tb water
ts vanilla, optional

Preheat oven to 375 degrees. Combine lemon cake mix, lemon pudding, Sun-Drop, eggs, and oil in a medium bowl. Beat with an electric mixer until well blended. Pour into greased and floured Bundt pan. Bake for about 30
minutes, or until done. While baking, mix glaze ingredients together. Take out of pan. While warm, pour the glaze over it

Combine:
2 Tbsp. flour
1 Tbsp. butter
1 cup pineapple juice
1/2 cup sugar
1 egg
Whisk together and cook over med-low heat until thickened. Set aside to cool. After cooling, stir in:
1 cup whipped topping
Serve with fresh fruits of choice for dipping.
And, it is yummy!
I have been making this since the 80's. So easy and so tasty! Enjoy!
